chewy seedy apricot oaty bars

Ingredients

300g/11oz porridge oats
100g/4oz pumpkin or sunflower seeds, or a mixture of the two
50g/2oz desiccated coconut
50g/2oz plain flour
200g/7oz butter
200g/7oz golden syrup - 1 tablespoon is equal to approx 1oz
150g/5oz soft brown sugar
150g/5oz dried apricots, chopped
125g/4½oz crunchy peanut butter
1 tsp vanilla extract

Method

1. Preheat the oven to 160C/325F/Gas 3.
2. Line an 18cm/7inx28cm/11in Swiss roll tin with non-stick baking parchment, leaving a little of the parchment hanging over the edges for easy removal later.
3. Place the oats, seeds, coconut and flour into a large bowl and mix together.
4. Place the butter and golden syrup into a saucepan and cook until the two ingredients have melted and combined.
5. Add the sugar, chopped apricots, peanut butter and vanilla extract to the saucepan and mix well. Then pour the mixture into the bowl of dry ingredients and mix together until the ingredients have become evenly combined.
6. Pour the mixture into the prepared tin and press down firmly with a wooden spoon. Transfer the tin to the oven and bake for 20-25 minutes, or until the mixture has become golden-brown and slightly firm. Remove the mixture from the oven and allow it to cool in the tin.
7. Once the mixture has cooled remove it, and, still in the paper, cut it into 18 bars (or cut them to whatever size you want them to be).
8. Store in an air-tight container for up to one week. These will also freeze well.

Lemon Drizzle Muffins

Ingredients

2 eggs, beaten
85g/3oz caster sugar
240ml/8fl oz milk
100ml/3½fl oz vegetable oil
300g/10oz plain flour
3 tsp baking powder
½ tsp salt
4 lemons, zest only
For the topping
50g/2oz icing sugar
1 lemon, juice only
sprigs lemon thyme, to garnish (optional)

Method

1. Preheat the oven to 200C/400F/Gas 6. Line a muffin tin with paper cases. Mix the egg, sugar, milk and oil in a large bowl. Sift in the flour, baking powder, salt and then add the lemon. Roughly mix.
2. Spoon the mixture into the pre-prepared muffin cases.
3. Bake for 30-35 minutes until well risen and golden. Cool on a wire rack.
4. Make the lemon drizzle topping by mixing together the sugar and lemon juice.
5. Spoon the lemon drizzle mixture over the cooled muffins. If desired, decorate the muffins with sprigs of lemon thyme.

trialling my 'pretty...' post today - let me know what you think! pretty stripes, pretty flowers, pretty embroidery :D

here are my favourites of the day, hope you love them as much as me!! and i found a great way to make pompoms like super quick, much better than the way i been doing it!! :) Isnt that apple the cooolest!! and i love buttons, handmade things and embroidery, oooh i must get some more things on my to-do-2010 list!

how is your xmas shopping / wrapping / organising going? Ive wrapped almost all the presents but they still need some work to make them extra special!! at least everyone has super lovely (mostly handmade!) things this year, ooooh cant wait for people to see them!!!

xmas things




a

carrying on the xmas theme, here are todays little bits of inspiration!!
i lvoe the little cat and deer photo, i mean how cute is that!! My cats are not as accomodating in the cute photos dept, they just look at my woodland collection and raise their eyes in total dissinterest!

today i have been mostly playing scrabble on the i-touch (best £2.99 i've spent for a long time!) and searching for little xmassy lovelies to share, ooooooh how i love this time of year!! I should really make some of those adorable snowflake cookies, wouldnt they be a dream to have in the biscuit barrel! :)

Festive jumpers





These are Oh so cute!! I been so happy - jollily scouring the interweb for lovely festive ideas and of course it certainly did not dissapoint! Today I share with you some gorgeous xmas jumpers, yes the sad old traditional xmas jumpers are out and happily i report these lovely replacements -these ones i simply couldnt resist (or fit into with all those mince pies lol) I love the cute deers!!

Cool things I found today

Beads and crafty things













Quick one, I found these hand made buttons beads and keyrings on the net this moring and HAD to share, they are made from polymer clay and ooooooooooh so cute, i wish i had the patience to make things like this!! The jelly babies are SO REAL!!! and the ninjas, oh so gorgeous, and of course the super cuppakes, it really has been cake month in September LOL
